It’s that time of year again, Pumpkin Spice EVERYTHING! Over at INFINIT nutrition we have been baking up some warm delicious pumpkin spice protein cookies.
Whether you’re craving something sweet, need a mid-day boost, or just finished a workout, this treat is sure to do the trick and sneak in some extra grams of protein.

Pumpkin spice cookies satisfy your craving for a sweet treat while also providing nutritious health benefits. Pumpkin is a nutrient-dense low-calorie food packed with vitamin A, fiber, and antioxidants.

Pumpkin Spice MUD Protein Cookies
Yields: 28 Cookies
Cookie Ingredients:
2 ½ cups all purpose flour
2 scoops RAW or MUD
1 tsp baking soda
1 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp salt
½ cup unsalted butter, softened
1 ¼ cup granulated sugar
½ cup canned pumpkin Puree
1 large egg
1 tsp vanilla extract
Icing Ingredients:
4 tbsp butter
¼ cup cream cheese
1 ½ cup powdered sugar
½ tsp vanilla
Directions:
- In a medium bowl, mix flour, MUD, baking soda, cinnamon, nutmeg and salt.
- Using an electric mixer in a large bowl, beat the butter and sugar until blended. Mix in the pumpkin puree, egg, and vanilla until smooth.
- Slowly mix in the flour mixture until combined
- Cover and chill in the fridge for 1 hour or until dough is firm enough to roll in hands.
- Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
- In a small bowl mix icing ingredients together.
- Using a tablespoon, roll out cookie dough into balls and place cookies 2 inches apart on the baking sheet.
- Bake for 10-12 minutes or until lightly browned on the bottom.
- Let cook for 8-10 minutes then lightly spread icing on.
