Cold Brew Shortbread Cookies

When your customers are as good of bakers as ours are, you can’t help but share some of the love. INFINIT Customer Gail Gottfried loves our COLD BREW protein coffee so much that she created her own collection of Cold Brew Cookie Recipes.

We first featured these beautiful confections on Instagram in May, and man did we get a reaction! Not only are these cookies Instagram-worthy they are delicious and nutritious.

Made with only 6 simple ingredients, these scrumptious shortbread cookies are drizzled with a Cocoa Kahlua Glaze (yes please!).

Ingredients - Cookies

1 c butter

2 scoops of INFINIT Cold Brew (~37 g)

⅓ c powdered sugar

Pinch of salt

1 c all purpose flour

1-2 T cream

Ingredients - Cocoa Kahlua Glaze

¼ c powdered sugar

1 t cocoa powder

2 t Kahlua or other coffee liquor

INFINITip: If you don’t have Kahlua on hand, or if it’s not your thing, you can easily substitute the Kahlua for vanilla extract for an equally sweet taste.

Instructions - Cookies

1. In a medium bowl, cream together butter and sugar until smooth
2. Add INFINIT Cold Brew, salt, and flour. Mix well to form a dough
3. Add cream 1 T at a time, as needed, until dough forms and no longer crumbles
4. Wrap & chill for at least 3 hours
5. Roll out dough until flat & cut into circles. Place on a lined cookie sheet, ½ inch apart
6. Place in the freezer for one hour
7. Bake at 350F for 9 minutes, turning halfway
8. Remove from cookie sheet immediately

Instructions - Glaze

1. In a small bowl, stir together powdered sugar, cocoa powder, and Kahlua (or vanilla) until well combined
2. Drizzle over cookies

Serve, and enjoy!
